Here's my healthy take on some of the ultimate Christmas classics.
Healthy Christmas Classic Recipes
Christmas Biscuits
Don't forget to leave some for Santa!
Ingredients
225g buckwheat flour
115g butter or coconut oil
1/2 tsp bicarbonate of soda
3/4 tsp ground cinnamon
3/4 tsp ground ginger
115g coconut sugar
1 flax egg
Method
Cream together the butter and sugar and gradually add the egg white a little at a time.
In another bowl, sift all the dry ingredients together.
Add a little at a time to the creamed mixture to make a dough.
Wrap the dough in cling film and chill in the freezer for around 10 minutes.
Roll out the dough onto a floured board.
Using cookie cutters, shape your biscuits and place them onto a baking tray lined with parchment paper.
Bake at 180C for 10-12 minutes
Leave to cool on cooling rack (if you can wait that long)
Decorate as you please or munch them plain!
Mince Pies
Perfect after dinner treat!
Ingredients
For the pastry:
1 flax egg
15g coconut oil
1 tbsp maple or date syrup
1/4 tsp bicarbonate of soda
1/4 tsp salt
200g ground almonds
For the filling:
150g dried mixed fruit
40g goji berries or dried cranberries
2 finely chopped apples
Zest and juice of 1 lemon and 1 orange
1/2 tsp ground mixed spice
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground cloves
2 tbsps brandy or orange liqueur
30g coconut oil
Method
Preheat the oven to 180C
Line a cupcake cake tin with flattened cupcake cases
Put all the ingredients into the food processor to make a dough and cover in cling film.
Chill in the fridge for 20 minutes.
Then remove cling film and roll out the dough till about 4mm thick between two sheets of parchment paper.
Then cut out circles to fit the cake cases in the cake tin.
Cook in the oven for around 5 minutes.
Whilst the pastry was in the oven, time to make the filling!
Put all the filling ingredients into a saucepan, cover and cook on a low heat for about 20 minutes, stir occasionally to stop sticking.
Once the pastry has been taken out of the oven, let them cool down for around 5 minutes and then fill each pastry with the filling!
Once it has been filled, cook in the oven for around 10-12 minutes.
Mulled Wine
As the cold nights draw in, nothing beats a hot glass of mulled wine by the fire!
Ingredients
1 Bottle red wine
3/4 litre water
1 orange sliced
3 tbsps coconut sugar
Thumb size piece freshly grated root ginger
1 tsp ground cinnamon
1 tsp ground nutmeg
1-2 tbsps Brandy or Old Luxters Blood Orange Liqueur
Method
Put all the ingredients in slow cooker and mix well. Then heat on high for 2-3 hours
OR
Put all ingredients in a saucepan - keep it on a low heat and stir until sugar has dissolved for at least 20 minutes. Don't let it boil though!
