Seeded Country Loaf
This week, I'm showing you all how to make a loaf of champions.
I call it my Healthy Seeded Country Loaf.

So, are you bread-y?
So on Bake Off this week, it was obviously bread week. A week that I had been slightly dreading. To date, I have never made a successful healthy version of bread - it's always been flat, tasteless and chewy. Today though, things changed. This bread is glorious. Genuinely glorious. If you don't believe me, try baking it!
Ingredients
160g organic stoneground spelt flour or buckwheat flour
1/4 tsp bicarbonate of soda
1/4 tsp salt
2 tbsp lemon juice
200g sweet potato roasted and mashed
15g milled flaxseed/pumpkin seed/sunflower seed mix
50g pumpkin seeds
50g sunflower seeds
50g sesame seeds
Method
Preheat your oven to 180C and line a tray with parchment paper.
Mix the sweet potato, flour, bicarbonate, salt, lemon juice and milled seed combination together to form a dough.
Then knead in the rest of the seeds!
Bake in the oven for around 30-40 minutes.
Allow to cool before cutting a slice and devouring the entire lot in one go.
It's so versatile - think of all the things you can do with it. Smashed avocado on toast, spread some chia seed jam on there, melted butter, grilled halloumi on top... Oh the possibilities are endless! No post-bread bloat and it's packed with goodness too!
